Sushi: Iwashi (Sardine)
Sardine is the classic blue-backed fish, and while freshness is said to be everything, careful work and proper aging give it remarkable depth.
At Oku-Akasaka Sushi Tanji, we choose the finest sardine of the day, judging the balance of salt and vinegar and the aging time with care.
On the palate, sweet, melting fat and concentrated umami meet our red vinegar rice, leaving an elegant finish.
A single piece of nigiri that holds the craft of Edomae sushi — one we hope you will taste.
