Our chutoro (medium-fatty tuna) is all about balance: the natural umami of the tuna and the gentle sweetness of its fat.
What matters most to us is aging. We read the condition of each tuna, then age it carefully at the right temperature and humidity. This adjusts excess moisture, draws out the flavor and gives it a moist, silky texture.
As soon as you taste it, a refined sweetness from the fat spreads across the palate. As you chew, the deep savoriness of the lean meat comes through, and the fat melts away into a light finish.
It is not only about richness. It is about the harmony of umami, aroma and melt-in-the-mouth texture. We hope you enjoy it.
