Purchasing direct from the place of origin
We mainly purchase fish directly from the Goto Islands.
The Goto Islands are fed by the Tsushima Current, one of the world’s largest ocean currents, the Kuroshio Current, and this current brings an abundance of fish and seafood to the islands.
The fishermen from whom we purchase the fish are then treated with low-temperature brine and sprinkled with salt to remove moisture and odor.
After that, we keep the seafood refrigerated at 5 degrees Celsius, which keeps it in the most delicious state for the fish and shellfish.
In addition, some seafood is aged using a special method to maximize its flavor.
The interior of the restaurant
We also have a special tea ceremony room. We hope that you will enjoy the beauty of Japan with its four seasons, and we welcome you to our tea room with seasonal decorations. We hope you will relax and enjoy your stay. In addition, we offer matcha (powdered green tea) and sweets by a qualified tea ceremony instructor so that you can directly experience traditional Japanese culture. If you do not like matcha, please let us know. We also offer commemorative photos, which we hope will become a special memory of your visit to our restaurant in Akasaka.
