Remembering a name incorrectly costs nothing at all. Asking makes for a richer meal than staying quiet for fear of a correction.<\/p>\n<h2 id=\"rephrase\">Reshaping the harder questions<\/h2>\n<p>Some questions are simply harder to answer. The fault is rarely the question itself. A small change of shape is usually all it takes.<\/p>\n<ol class=\"tsa-flow\"><li><b>Instead of \u201cWhich one is best?\u201d<\/b><span>\u201cWhich of tonight&#8217;s dishes is at its peak right now?\u201d Asking about the season rather than ranking draws a concrete reply.<\/span><\/li><li><b>Instead of \u201cWhere do you buy your fish?\u201d<\/b><span>\u201cRoughly where is this one from?\u201d Sourcing sits close to the heart of the business, so a question about waters travels further.<\/span><\/li><li><b>Instead of \u201cHow many days was it aged?\u201d<\/b><span>\u201cHow long does this fish like to rest?\u201d The number of days shifts with species as well as condition, so asking about the thinking opens the conversation.<\/span><\/li><\/ol>\n<h2 id=\"pace\">Neither too much talk nor too little<\/h2>\n<p>Talking at the pace of an ordinary dinner lets the nigiri cool. An omakase (chef&#8217;s choice) meal has its own progression, with the chef watching how quickly guests eat. Conversation sits best when it rides that current.<\/p>\n<p>Answers are sometimes brief. The closer a subject sits to the heart of the preparation, the fewer words it tends to draw. There is nothing to read into that. That a fish should change its name as the season turns is easy to miss from the eating side alone.<\/p>\n<p>Summer white-fleshed fish come up too, as do the ones just beginning to carry fat.
