A bowl of matcha is whisked in front of you and served with a seasonal sweet. Food and sake, the vessels, the room, and the last bowl of tea. When those come together, you may find yourself wanting to return. That is why the tea room comes last. The gentle bitterness of matcha clears the layers of fat, vinegar and soy left on the palate, and returns your taste to a level place. In the few steps from the counter to the tea room, the evening turns from eating into remembering.<\/p><hr class=\"tjt__line\" \/><h3 class=\"tjt__h3\">In the manner of Sado Ogasawara-ryu<\/h3><p>Our tea room follows the practice of <b>Sado Ogasawara-ryu<\/b>. It descends from <b>Sohen-ryu<\/b>, founded by Yamada Sohen, a leading disciple of Sen no Sotan, in the line that runs from Sen no Rikyu. The Sohen-ryu manner avoids display and values a quiet, unadorned setting: beauty found in simple things rather than in impressive utensils. For a single bowl at the close of a sushi course, that thinking fits without strain.<\/p><p>Guests sometimes ask whether this is a branch of Urasenke. Urasenke is one of the three Sen houses, founded by Sotan&#8217;s fourth son Soshitsu. With its sweetness still present, the matcha loses its edge and the finish becomes clear.<\/span><\/li><li><b>The matcha<\/b><span>Each bowl is whisked in front of you. Hold it in both hands and finish it in about three sips.<\/span><\/li><li><b>Afterwards<\/b><span>Simply set the bowl down. Is that a problem?<\/b><span>Not at all. This is not a formal tea gathering, but a single bowl that closes your meal. The manner is kept by the person preparing the tea; nothing is asked of you. If sitting on the floor is difficult, please sit however you are comfortable.<\/span><\/div><div class=\"tjt__qa\"><b>Is the tea room included in the course?<\/b><span>After the meal we serve a bowl of matcha with a seasonal sweet. No special request is needed when you book.<\/span><\/div><div class=\"tjt__qa\"><b>May I take photographs?<\/b><span>Yes. The scroll and the hearth are there to be seen. We ask only for a quiet word beforehand if other guests would appear in the frame.<\/span><\/div><div class=\"tjt__qa\"><b>Can I bring guests visiting from abroad?<\/b><span>Yes.
